I don’t know about you, but for me there are very few things that beat waking up to the smell of muffins baking in the oven. Now that I live alone, I have to make-do with waking up early enough to make them before it can be enjoyed, but it’s still worthwhile, especially with such an easy, delicious recipe as this one. I can pop it in the oven, have a quick shower, and have delicious hot muffins when I’m done.

I came across the recipe on the back of the package of 10 Grain Bob’s Red Mill cereal, and have spruced it up to my taste. I’ve made it with both 10-grain and 7-grain mixes from Bob’s Red Mill, which I often have as hot cereal as well. I hope you enjoy, and I really hope you will surprise a loved-one with them one day!

Ingredients: makes 12 muffins 
-1 1/4 cups sour milk/buttermilk (just add 1-2 tsp lemon juice or vinegar to milk, it will go sour!)
-1 cup 10 grain breakfast cereal (or 7 grain), I use Bob’s Red Mill (that’s where the recipe comes from)

-1/3 cup butter, room temperature (original recipe calls for margarine, so I’m sure it works well too)
-1/2 cup sugar
-1 large egg

-1 cup unbleached white flour
-1/2 tsp salt
-1 tsp baking powder
-1 tsp baking soda

-1/2 cup dried cranberries (I like to use the dehydrated kind that is unsweetened, but I’m sure craisins are delicious too)
-zest from 1 orange or 2 clementines
-1/2 cup pecans (optional)
-12 muffin tin liners

Directions:

Put milk and 10-grain cereal in a bowl and stir. Let stand while you prep the rest. Preheat oven to 400F. Line each muffin pan with muffin liners (this will help a lot!).

Cream the butter and sugar in a large bowl. Once creamed, add the egg. Mix well, then add the orange zest. In another bowl, mix the flour, salt, baking soda, and baking powder.

Add dry ingredients and milk/10 grain cereal mix to the big bowl, and stir well. Add the cranberries and pecans.

Pour into a muffin tin either lined with muffin paper (my preference with these muffins as they are a bit sticky) or greased and floured.

Bake for 15-17 minutes, then remove from the muffin tin onto a cooling rack and enjoy warm!

As I write up my blog about the most recent, and one of my most exciting culinary adventures in a while, I realize there are a few things I want to share with those who read this blog, including why I’m so excited about this recipe, and who I’m dedicating it to. It’s a bit more personal than normal (aka longer to read), so if you’re looking for the recipe fast, then just scroll down a bit past the photo!

First of all, as I look back on my relationship with food over the years – going from child to want-to-be-chef to medical student, it’s funny to see¬†how my relationship with food has changed.¬†I realize that I was very lucky to have parents and friends who took such great care to feed me healthy food me despite my wishing that¬†I had more access to junk food when I was in primary school. I remember spaghetti squash days as those when I¬†would have done almost anything¬†to¬†have a less healthy meal instead. I’d have traded almost anything for a fruit roll-up, or some dunk-a-roos. Now, though, here I am becoming a healthcare professional, and really (naively) hoping that one day, many of the patients I see will be able to have access to healthy¬†food, will have spaces in which to cook it, and time and knowledge to do so. Not to mention the desire to cook and to eat healthy food, or at least have someone around them with the desire and all the other necessary prerequisites, who would share it with them. I know it’s an ideal and a very naive wish, but hey,¬†it’s what I wish for.

Second, as this recipe is my own creation, I’m publishing it for Catherine, my wonderful friend and co-blogger, for her birthday this year! ¬†I know I’m early, but I’ve already promised to publish this recipe to a number of friends, and I’m sure Catherine would love to know that the recipe I’m sharing in her honour has already been enjoyed by many!¬†This recipe is perfect for Catherine: it’s one that keeps on giving (one spaghetti squash can feed many mouths, or can make many lunches!), it’s delicious, healthy, and it’s fully realistic to make while busy with clerkship. All you need is the ingredients, 10 minutes to assemble, and an hour in the oven.

I hope you enjoy this spaghetti squash surprise!

Ingredients – for 1 full spaghetti squash, or approximately 6 servings

-1 spaghetti squash, cut in half lengthwise with seeds scraped out
-2 Tbsp olive (or other) oil
-1 onion, diced
-1 clove garlic, minced
-1/2 cup chopped fresh parsley or 1 tbsp dried parsley
-1 tomato, diced
-lb lean ground beef
-1/2 cup dried cranberries
-zest from 1 lemon, finely grated
-1/4-1/2 tsp hot chilli flakes or cayenne
-1 tsp cinnamon
-1 tsp ground cumin
-1/4 tsp salt or more to taste

Topping:

-1/2 cup breadcrumbs
-1 Tbsp butter

Directions

Preheat oven to 350 F.

Dice the onion, mince or crush the garlic, chop the tomato and the parsley, zest the lemon, and throw all of these ingredients in a medium bowl with the meat, chilli flakes, cinnamon, cumin, salt, and dried cranberries. Add 1 Tbsp olive oil and mix well.

Meanwhile brush or coat the two spaghetti squash halves with the other Tbsp of oil. Fill each of the spaghetti squash halves with the meat stuffing, packing it down so it all fits. If it overflows a bit, it’s fine.

Place the spaghetti squash halves in a deep baking dish with 1 inch of water in the bottom of the dish. Cover with aluminum foil. Cook for 50-60 minutes, until the squash is soft. Once cooked, you might find there is a lot of juice in the squash (depends on the squash) – you can just drain it by pressing the meat stuffing down into the squash and placing the squash at an angle to let it drain out. This might not be necessary.

Before serving, melt the butter in a frying pan, and add the breadcrumbs. Top the squash with the breadcrumbs and keep in the oven until ready to serve!

Cran almond and feta salad

Since I’ve lived in two very different yet both remote locations these past two years, I’ve learned that a yearning for delicious food and the absence of many of my favourite items makes for some intense cravings. Last year, I would have done just about anything for something other than palm oil and broken-grade rice; this year I would do just about anything for something other than a tasteless carrot or bitter celery.

As a member of the local volunteer fire department and ambulance service, I’m learning about standing up for myself in conversations dominated by men. This past weekend we had a pot-luck at the firehall, and I knew the food would be heavy on ‚Äúman food‚ÄĚ, which I’ve determined through my engagement in the department to mean meat-heavy (always) and often sauce-based dishes or casseroles. The food is usually delicious, but it lacks in the veggie dimension. I hate to follow the entrenched rules and bring light food as is expected of a woman, but at the same time the extreme lack of the vegetable and fruit food group made my final decision to bring a salad a no-brainer. I knew it would just reinforce stereotypes, but that’s something I can handle.

Here’s the recipe for the delicious salad we brought along to the potluck!

Cran Almond Feta with Vinaigrette

Ingredients ‚Äď 6 servings

1 head lettuce (anything except iceberg if you can help it), washed, dried, and torn into pieces

1/3 cup dried cranberries

1/2 cup sliced almonds

1/2 Tbsp butter

2 Tbsp maple syrup

2/3 cup crumbled feta

1/2 cucumber, quartered then sliced

Vinaigrette

2 Tbsp grain dijon mustard

11/2 Tbsp cider vinegar

4 Tbsp olive oil

1/2 shallot, minced

1 tsp crushed tarragon

salt and pepper to taste

Directions

Heat butter in a frying pan over medium heat. Once melted add the maple syrup. Once hot and mixed, drop in the almonds and cook, stirring every minute or so, until they brown. Allow them to cool and make sure the clusters are not too big by separating them with your fingers.

Wash the lettuce and cucumber and prepare. Place lettuce in a large salad bowl, and sprinkle the cucumber over top, along with the feta and the cranberries, and then the maple-candied almonds. Cover until ready to serve.

To make the vinaigrette, mix the mustard and vinegar well. Add the oil and stir vigorously until it combines. Add the shallot, tarragon, salt and pepper. Pour over salad when ready to eat!

A year and a half ago I was browsing through my mother’s books in her living room and I came to ‚ÄúThe Boreal Gourmet ‚Äď adventures in northern cooking‚ÄĚ. It caught my eye, and I was soon going through it, savouring the stories and their accompanying recipes. The book is written by a woman who grew up in Toronto, was deeply influenced by her mother’s delicious cooking, spent time in Greece learning to cook traditional Greek food, and who finally ended up in the Yukon Territories cooking up a storm.

When my mother came in and found me reading the book she was very disappointed ‚Äď somehow I’d managed to pick through her entire book collection to land on the ONE book I was not supposed to see ‚Äď it was intended as a birthday present later that year for me. I quickly put it away and basically forgot its existence until my birthday a few months later.

Soon after I was given the book, though, I stepped into an adventure taking me to Gambia, and my exploration of the recipes in the book was postponed until this year when I have somehow managed to walk myself right into the Northern refrigerator. There is over a meter snow on the ground, the boreal forest is scraggly at best, and I live on the very Northern end of the Canadian Railway in the Northwest Territories. G. and I brought one cookbook with us: ‚ÄúThe Boreal Gourmet‚ÄĚ, and we’ve had a great time taking a crack at many recipes already.

Spirited cranberry sauce is great with everything from cheesecake to pancakes to meats… and probably many other things I have yet to try!

We’ve got a large mound of buffalo in the freezer, along with several whitefish fillets, and 10 cups of rosehips we’ve planned to transform into preserves. What fun! All these ingredients come from the land around us. I was hoping to harvest cranberries to make this sauce but the snow came unexpectedly fast, and so I was forced to buy a bag of fresh ones at the store (I was lucky enough to find some!).

Ingredients

2 cups fresh or frozen cranberries

3 Tbsp sugar

2 tsp raw honey (I used wild honey from Gambia with a smoky flavour since that’s how they collect it by smoking the bees out!)

Juice and rind of two oranges

2 Tbsp rum

Directions

Put all ingredients into a pot, and add a Tbsp of water if the liquids are too low to get a simmer going. Simmer covered for 20 minutes, until thick. Use a fork to mix it up and puree the cranberries a bit.

Serve with roast meat or turkey, or with cheesecake (as I will post soon!)

This time of year, the market is beginning to look pretty scarce. Beside brussel sprouts, green vegetables are rumoured to exist. And as much as I love turnips and beets, there are only so many one can eat before you are craving something a little more exciting. This is when the humble squash begins to shine. Abundant mid-winter, this vegetable is sweet in every sense of the word. I love the flavours of squash and curry mixed (curried butternut squash soup being one of my favourites), so when inspired last weekend to cook dinner for 8, I decided to invent a moroccan-inspired stuffed acorn squash.

The resulting entree was a delight – the nutty bulgar infused with fragrant spices complimented the sweetness of the squash flesh, with the cranberries and red pepper adding a hint of red dazzle!

To make this dish vegan, simply omit the ground chicken.

Moroccan-Style Stuffed Acorn Squash
(each squash serves 2)

Ingredients:
2 large acorn squash, halved and seeded
*********************
3/4 cup uncooked barley
1 1/4 cup vegetable broth
*********************
Olive oil
1 onion, chopped
2 cloves garlic, chopped
1/2 pound ground chicken
Handful of carrots, chopped
1 zucchini, chopped
1/2 red pepper, chopped
1 cup chickpeas, drained and rinsed
1/2 cup craisins (dried cranberries)
1 1/2 tablespoons ground cumin
1 teaspoon cinnamon
Salt and pepper to taste
1/4 cup chopped parsley, chopped

Directions:
Preheat oven to 400F. Place squashes cut side down in a glass baking dish. Bake until tender, 30-40 minutes. Allow to cool slightly, before scraping out the squash fleshing, leaving 1/2 inch thick bowls. Reserve the squash to add to the mixture

Meanwhile, bring bulgar and broth to a boil. Reduce heat to medium-low, cover, and cook for 15 minutes or until all the broth has evaporated. Remove from heat, let stand, covered for five minutes.

Saute onion, garlic, and ground chicken until the vegetables are translucent and the chicken is cooked through. Add the carrots, zucchini, red pepper, and spices, and saute for five minutes or until the vegetables are soft and the spices are fragrant. Season with salt and pepper. Mix in the craisins, chickpeas, parsley, bulgur and squash flesh. Sample filling, and adjust spices as desired.

Divide the filling among the squash halves, and return to oven. Bake until warmed through and the stuffing is starting to crisp, 12-15 minutes.

¬†With Christmas lights sparkling on the street, I was recently inspired to make a fancy Christmas desert. ¬†It is a truth universally acknowledged that The Three Tarts Bakery makes some of the most divine tarts in Ottawa, and one of my particular favourites is their white chocolate cranberry pistachio tart. ¬†¬†This tart¬†recipe, which infuses orange zest in the shortbread crust, looked like it could challenge The Three Tarts’ recipe – both for taste and for prettiness. ¬†The added hint of citrus reminded me of oranges in my stocking on Christmas morning, the cranberries of turkey dinner, and the pistachios of eating nuts around a fire. ¬†I could not have hoped for a better Christmas desert.
The tart exceeded all expectations: creamy and smooth, the sweetness of the white chocolate was balanced beautifully by the tartness of the cranberries, the nuttiness of the pistachios, and the zestiness of the shortbread crust. ¬†I’ll have to find another excuse to make this again over the holidays!

 

White Chocolate Cranberry Tart with Toasted Pistachios
(1 10-inch tart: serves 12)

 

Ingredients:
TART PASTRY
1 1/3 cups all purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter
1 egg yolk
2 Tablespoons whipping cream
Finely grated zest of one orange

 

WHITE CHOCOLATE FILLING
4 ounces shelled unsalted pistachios (or a generous 1/2 cup)
1 cup fresh or frozen cranberries
3/4 cup whipping cream
12 oz white chocolate, finely chopped or white chocolate chips
1/4 cup butter
1 teaspoon vanilla
1 ounce bittersweet chocolate
Splash of milk

 

Directions:
TART PASTRY
Cut the butter into the flour and sugar until the mixture resembles coarse oatmeal.  Whist together the egg yolk, whipping  cream, and orange zest together, and combine with the flour until the dough clings together.  Pat into a disc, wrap, and chill for 30 minutes.
Preheat oven to 350 degrees.  Roll our tart pastry on a floured surface and transfer to 10 inch tart pan.  Trim edges. Cover with parchment paper and weigh down with beans or pastry weights. Bake for 15 minutes, remove the pie weights, and bake for 10 minutes more, or until golden. Remove the tart shell from oven and allow to cool.

 

WHITE CHOCOLATE FILLING
Shell pistachios and toast if necessary.  Blanch cranberries in a large pot of boiling water.  Shock the blanched cranberries in an icebath and allow to dry on paper towel.
In a small saucepan, bring the cream to a boil.  Add the white chocolate, wait a minute, and then stir until incorporated.  Add the butter and stir until smooth; avoid over-stirring since it will result in air bubbles in the tart.
Randomly scatter the pistachios and cranberries in the tart shell, and carefully pour the white chocolate cream filling overtop until the fruit and nuts are completely covered.  You will have a little extra chocolate cream filling left over.
Microwave the bittersweet chocolate in a small splash of milk for 45 seconds.  Stir until smooth and the chocolate is completely melted.  Dribble the dark chocolate over the tart.
Refrigerate for at least four hours or overnight. One hour before serving, remove the tart to allow it to soften and enhance the flavours.  Cut with a hot dry knife.
